Confortel, a “Vertical” restaurant in the Valencia Aqua

Confortel Aqua has a new restaurant, with excellent avant-garde cuisine with Mediterranean roots.
The Confortel Aqua 4-star hotel in Valencia has just opened a new restaurant, the ‘Vertical’, which as well as offering excellent cuisine, based on impeccable avant-garde gastronomy with Mediterranean roots, treats its customers to the most spectacular views of Valencia, as it is located in a privileged place: the top floor of the hotel in the main expansion area in the capital of eastern Spain.
The project is headed up by Javier Andrés Salvador, one of the best restaurateurs in the city, known to be one of the top exponents of modern Valencian cuisine. The basic pillars of his work combine the richness and tradition of Mediterranean cuisine with the fresh and refined touch of nouvelle cuisine. This interesting mixture produces fresh menus, made with the best local produce and handled with elegance in order to obtain the typical lightness of contemporary cuisine. As you would expect, the rice and fish dishes are outstanding, particularly the red mullet, sea bass and sea bream, which arrive at the restaurant every day from the city’s fish markets.
With the new ‘Vertical’ restaurant, the Valencian Confortel Hotels complex (the 3-star Aqua and the 4-star Aqua) has become a gastronomic benchmark of the city alongside the City of Arts and Sciences and Oceanografic complexes.
